INGREDIENTS

  • 1 cup dried lentils, rinsed and drained
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 2 tomatoes, diced
  • 1 jalapeño pepper, seeded and minced (optional, for heat)
  • 6 cups chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 bay leaf
  • 1/2 cup chopped cilantro
  • Juice of 1 lime
  • Optional garnishes: avocado slices, crumbled queso fresco, lime wedges, chopped cilantro

 

INSTRUCTIONS

  1. Prep the Ingredients: Make sure all your vegetables are properly washed, peeled, diced, and ready to go. Rinse the lentils under cold water.

  2. Cook the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and jalapeño (if using). Sauté for about 5 minutes, or until the onions are translucent and the vegetables start to soften.

  3. Add the Lentils and Broth: Stir in the diced tomatoes, lentils, chicken or vegetable broth, ground cumin, dried oregano, bay leaf, and season with salt and pepper. Bring to a boil, then reduce the heat, cover, and simmer.

  4. Simmer: Let the soup simmer for about 25 to 30 minutes, or until the lentils are tender. Stir occasionally to prevent sticking.

  5. Final Touches: Once the lentils are cooked, remove the bay leaf. Add the chopped cilantro and lime juice, adjusting the seasoning with more salt and pepper if needed.

  6. Serve: Ladle the soup into bowls and garnish with avocado slices, crumbled queso fresco, additional cilantro, and lime wedges if desired.
